A dish to your heart?

︎︎︎My all-time favourite is the classic Tarte Tatin. It is perfect for me, the texture (crunchy and soft), the taste (sour, sweet, creamy) the beautiful look. And the fact that you heat sugar and water and get a golden, deliciously smelling caramel. It is  like a wonder. (I´d be happy to share my Tarte Tatin Recipe as well)


And the story behind?

︎︎︎ When I studied Patisserie in Paris I made this dish many times in my tiny Parisian apartment. It is a guaranteed winner when you invite friends and also easy to prepare in advance.

Moment︎︎︎



Define a satisfying moment.

︎︎︎ Am very into sourdough baking at the moment. All about it is satisfying to me. The mixing and turning of the dough, the moment when you open the stove and see if it turned out nicely. And the fact that this incredible taste is made of only water and flour. A freshly baked slice with butter and salt: Pure pleasure.

Inspiration︎︎︎


How do you see yourself shift between multiple creative roles related to food?

︎︎︎ I think that is one of the biggest challenges in my job, as well as in many others today. Also, I feel that exactly this ability is what makes you better than others and shine out. Being able to see beyond your own nose, transferring your creativity to areas you are not comfortable with.

Your recipes present in certain aesthetics, how would you describe your style

︎︎︎ Positive, Creative, Hearty.

3 online/offline spots for inspirations?

︎︎︎ Local Markets, always my number one inspiration for what to cook and eat. I have a little market just around the corner here in Munich and go there almost every day (It is called Elisabethmarkt). Of course I loved all the markets in Paris ( like the Marché D´Aligre).

Instagram (so many talented people and pages  to follow, i.e. I just found Moro Dabron, so beautiful. 

I also love old vintage cookbooks, like the Time-Life Cookbooks from the 80s. I have a whole shelf with old cookbooks and keep looking for them on flea markets.  And I have a Folder of handwritten kitchen notes and recipes from my grandmother, those are priceless.

On-going and upcoming projects?

︎︎︎ Obviously, my year in Paris, studying Patisserie and living in this beautiful city. I am lucky because my little sister now lives there so I have the best reason to visit once in a while.

What kind of projects you’d like to get more involved in the future?

︎︎︎ I love jobs that involve travelling to new places and cultures, meeting new faces. These are my favourite and I hope they will keep coming.
